FRAISES AU VIN ROUGE is a simple French classic, pairing sweet seasonal strawberries with fruity red wine. Wash, hull, and halve lengthwise 4 cups fresh, ripe strawberries. Sprinkle berries with 2–3 tbsp. sugar, mix gently, then set aside to macerate for about 1 hour. Divide berries between 4 wine glasses, then pour in enough red wine—a young pinot noir or beaujolais—to cover berries. Serves 4. BALSAMIC STRAWBERRIES Sometimes berries look great but the first bite is disappointing. Don’t throw them out. Halve the berries, sprinkle a little sugar over them, then add a few drops of balsamic vinegar. This trick will coax every bit of flavor out of even the most reluctant berries.
